Due to things beyond my control, this post has now changed to “Yesterday Was the Day”.
It’s been 55 days since COVID19 changed the world as we know it, in Kingston, to businesses being closed and all of us staying home as much as possible. My place of business, Focus Personal Fitness Studio did close our doors, but I have continued to work. See, the owner, Randy, is an amazing man and realizes that, even though, the government mandated gyms to close, he knows Health and Fitness is an essential business. So, he created a whole new way of fitness which meant I still had a salary and work to do. Even though my hours of work are Monday to Thursday, even before this, they never really were. In this day and age of all of us carrying around a mini-computer, I am available 24/7. Sometimes things or emails just need to be answered on Friday, Saturday or Sunday. I do try to limit it, but it is hard when you have a boss like Randy who never shuts his brain off. So, now I basically just work off and on every day to make sure we stay in business.
So all that to say I haven’t had all this free time everyone else has had to do puzzles, blog, take long walks in the forest, clean out closets and bake. I have been a little envious of all of you but also very grateful to still receive a salary during this time.
Which, leads me to this post. I GOT TO DO SOME BAKING!!! I figured it was about time. I have been consistent with my running and workouts so felt I deserved some fresh home baked goods.
I started with a Peanut Butter Loaf that a friend had posted on Facebook. I often read recipes on FB but usually ignore them. This one caught my eye for a couple reasons, I love peanut butter and it had very few ingredients. So, I started to get out ingredients and this happened….
So I had to put baking on hold as I vacuum up my salt spill.
I was pretty smart this time (okay, it was a fluke) as each item I was making needed the oven to be higher and I actually started with the one that was at 325 and ended with 385!
This is the Peanut Butter Loaf. I actually would have added more Peanut Butter next time, just to give it some more flavour. It’s not very sweet at all.
2 Cups Flour, ¼ cup Sugar, 4 Teaspoons Baking Powder (yep you read that right), ½ Teaspoon Salt, 1 1/3 Cup Milk, 1/2 Cup Peanut Butter.
Mix Dry ingredients, mix in milk then the peanut butter. Scrape into greased loaf pan and bake at 325 for 1 hour.

If you guessed Dutch Apple Loaf, then you were correct. I made this one more for Ron because he loves apple anything. He had to taste this one to make sure it’s good. Here is the recipe.
The final recipe, Energy Cookies, is one I have made many times because they are just so good. Unfortunately, I cannot share the recipe for this one as I received it from our local Creamery/Bakery and promised I would not. Lots of fun ingredients in this one. I also didn’t have enough brown sugar, so I used what I had and they worked out just fine.
