Went to dinner at a friends and was taking dessert last weekend. Note to self, do not decide to have a nap and not set some sort of alarm, this does not give you enough time to make the dessert properly and get gussied up!
Cake took longer to cook that I thought. This seems to be a recurring theme. Maybe it’s my oven. Just sayin’..
You need an 8-inch round or 9-inch round with 2 or 3 inch sides.
Preheat oven to 350.
Place 2 TBSP. butter in pan and put in oven. When melted, remove from oven and spread butter around sides and bottom. Set aside.
For cake, in bowl mix:
1 1/3 cup flour
1 tsp. baking powder, 1/4 tsp., baking soda, 1/4 tsp. salt, 1/4 tsp. cardamom
Set aside
In a mixer cream, 1/2 cup butter, 2/3 cup brown sugar until creamy and fluffy. Add 1 large egg and 1 tsp. vanilla. Beat for 1 minute. Turn mixer off and scrape bowl. Then add dry ingredients. Beat on low while adding 2/3 sour cream. Beat just until batter comes together and it will be thick. Finish mixing by hand until all incorporated.
In the meantime, slice 1 cup strawberries.
Sprinkle 1/4 brown sugar into the melted butter in the cake pan. Sprinkle the strawberry slices over the butter and brown sugar in a single layer, OR not.
Spoon batter over the strawberries and spread evenly.
Bake for about 35 minutes or longer depending on your oven. Let rest for 10 minutes before running a knife around the edge and flipping on to a plate or serving platter.
Serve warm with whipping cream.
I made it to the dinner. A little late but with warm delicious cake enjoyed by all.
