Well, I am in Scottsdale, AZ for a few days. The main reason I came was for the Tour de Scottsdale.
There was 70 mile or 30 mile race. You have one change to guess which one I did. My good friend Denise decided that her I and should do the 30 mile and our husbands should do the 70 mile.
So, we fly to Phoenix with two bike bags as our luggage and two carry-ons. I just need to comment here that I have NEVER packed all my items in a carry-on… you should be very proud of me.
On October 14th, we got up at 4:00 am so we can eat and make it to the start line for a 6;30 start. After a few nervous pees, we start the ride and 2 hours and 6 minutes later, we cross the finish line with smiles on our faces. Not bad for my first race don’t you think.
Okay, back to cooing. Meredith arrived on Monday and wanted to make Fish tacos for dinner tonight.
You need, tomatoes, limes, onion, cilantro, red cabbage, avocados, cottage cheese, plain yogurt, jalapeno, chipolte, vinegar, oil, fish, corn tortillas.
Mix the chopped cilantro, tomatoes, jalapeno and lime together for the salsa.
Chop Red Cabbage and add vinegar, set aside.
For the guacamole, mash the avocados, tomatoes, onions, limes.
Cook the fish with some oil.
Blend the cottage cheese, chipolte and yogurt.
All ready to eat now, also grate some cheese and heat the corn tortillas, they are much better when heated.
They were absolutely amazing and we all helped!!
