So, I found out that Faith, my son’s girlfriend, doesn’t eat meat or fish.
So, in my head I am thinking YES! a challenge.

What ever do I make?  So of course I go to Joy the Baker.  Now, I have come to realize that my very first post may not be all that accurate.  I seem to be making many things but they are not all from Joy the Baker Cookbook.

Now, to be fair the next two recipes are actually from her website because I couldn’t really find anything in her cookbook that would work. So, my first non meat recipe was using Quinoa.

Don’t get your feathers in a ruffle, they are actually REALLY good!

You need Kale and Quinoa, surprise!! and some sun-dried tomatoes, onions, eggs blah, blah, blah

Quinoa is the new brown rice. Super healthy for you and easy to cook.

You have to cook the quinoa for about 30 minutes while you work on the other ingredients.

The recipe calls for Olive Oil but I used this new fangled Garlic Oil I find in this great winery. Heat the oil in a pan, then add onions and garlic and chopped kale until a bit wilted.

Remove and add a splash of apple cider vinegar.

You add this to the quinoa until it becomes room temperature.  If you are impatient like me, you can throw it in the fridge for about 30 minutes to help that process.

Then you add parmesan cheese, sun-dried tomatoes, parsley, bread crumbs and salt and pepper.  Add the beaten eggs until all the quinoa is moistened.  If not completely moist, add a bit of water.

I used an ice-cream scoop for starters then just got my hands in it to make the patties.  You cook them on medium low for about 4 to 5 minutes per side.

I think I should have maybe browned them a bit longer, but that goes back to that impatient thing…

Overall, I quite liked them and so did Faith and Eliot.
